I first heard about Bacon Jam when I read about Eat 17, a successful bar and restaurant in Walthamstow that created it to serve with burgers. Customers then started requesting jars to take home so they started selling it. I was so intrigued with this new condiment I decided to make my own. I”m not sure how Eat 17 make theirs but I found a recipe online. It seems the Americans have known about it for sometime. Martha Stewart -no less – has a recipe on her website. So far I’ve eaten it spread on a toasted bagel with a fried egg and it really is as good as they say it is. It’s keeps for about 4 weeks in the fridge. Or you can just buy it from Eat 17. It’s even selling on eBay.
