In an attempt to feed my two year old daughter a varied diet (she mainly subsists on peas and sausages) I have made the decision to try to be a little more creative with her food. My first attempt was thankfully a success. I know she likes quiche as she has eaten it with me before so I knew this wasn’t too much of a risk. These toddler sized versions are simply egg, smoked salmon and cheese in a homemade pastry casing. I used a muffin tin and folded the pastry up the sides to contain the filling. She loves them – especially with peas!
